The ultrasonic technology used by Döinghaus involves sound waves with frequencies above 16.000 Hz, which generate mechanical vibrations in the ultrasonic knife (20.000, 30.000 or 35.000 vibrations per second). This minimizes friction between the product and the knife, allowing for clean, pressure-free cuts with minimal deformation. It is ideal for soft, creamy, sticky, multi-layered, fresh or frozen products, resulting in smooth cuts and perfect surfaces.

The advantages include reducing cutting force by up to 90%, preserving the shape and position of ingredients (such as fruit inserts, chocolate, raisins or nuts), high blade durability, effective self-cleaning and fast, precise cuts with smooth edges and minimal waste. The company was awarded the award Silver International FoodTec Award at the Anuga FoodTec fair in Cologne for the innovation USS 1000 Helios, the first automatic cutting solution for soft cheese.

And for those who want equipment that can be operated by one person, the solution is Ultracut Kondus, a system that guarantees high productivity in a small production space, with intuitive control via touch screen and adjustable ultrasonic knives with 2 cutting heads.

In addition to ultrasonic solutions, Döinghaus offers equipment for auxiliary processes, optimizing automation, such as:

  • CUT 600, an ideal cutting machine for products such as biscuit rolls, with up to 70 cycles/min and adjustable piece sizes, guarantees high productivity as well as flexibility. After the cutting process, the products are automatically stored on a tray or, optionally, on a conveyor belt, so that a time-consuming manual process is no longer necessary.
  • KA 2000, with a compact design and stable structure, is designed for unloading dough masses, including compact and heavy ones, with precise depositing into trays.
  • Basket Tray Depositor, automatic depositor for products that need to be placed in baskets or trays, the machine automatically recognizes a basket and positions it longitudinally in an inclined position to be able to optimally transfer the product.
  • Product Laying Machine A 200-800: It continuously picks up products and places them on trays or plates, automatically adjusting the rows and the spaces between them.
  • Row Collector: Products arriving in one or more rows are collected by individually controlled conveyor belts and transferred as a batch to the next machine.
  • IQ-Move: The trays positioned in the docking station are fully automatically fed with products via a lifting portal, modularly compatible with pre-existing conveyor lines.

Döinghaus develops customized ultrasonic cutting lines, adapted to the customer's specific production process parameters, for a wide range of products. These include cutting synchronized with the conveyor speed, laser guidance, ease of use, remote technical support and easy cleaning via a UV disinfection station.

Examples: Soft/hard cheese lines with round or sword-type blades, with automatic edge transfer, complex cutting movements and contact protection; or lines with automatic extraction from oven shelves, centering function for round products like tarts, with multiple cutting heads and compatible with robots like pick & place.

All industrial cutting lines are made of stable stainless steel frames, high-tech components and have a modular structure.
