Coconut oil: the secret to a more elastic, tastier, healthier bread

• In search of alternatives that improve the taste, texture and nutritional value of bread, research in the field of baking is increasingly focused on natural ingredients with multiple benefits.

One of these ingredients is coconut oil, appreciated not only for its pleasant aroma and delicate texture, but also for its positive impact on the technological qualities of the finished product.

A study conducted in the laboratory of General technologies in the food industry within Faculty of Food and Tourism, Transilvania University of Brașov, focused on the effects of short-chain fats characteristic of coconut oil in bread dough.

The study investigated the quality characteristics of the finished product compared to those of products obtained using classic vegetable fats, sunflower oil and olive oil. The parameters monitored were bread volume, elasticity, crumb porosity and ease of dough processing.

Improved structure

The results showed that, in small concentrations, coconut oil significantly contributes to improving the structure of the dough. It becomes more elastic, less sticky and easier to shape. In addition, the resulting bread has a smooth crust, airy core and a pleasant, slightly sweet aroma. On the other hand, the excessive use of fats – regardless of their type – leads to a dense, greasy core and a reduced final volume.

In addition to its technological advantages, coconut oil also brings health benefits. The medium-chain fatty acids it contains are associated with a more active metabolism and an improved lipid profile. It also has antimicrobial and antioxidant properties, making it increasingly used to obtain functional products.

With a solid texture at low temperatures, coconut oil it is efficiently incorporated into the dough and contributes to the formation of a stable structure, without negatively affecting the fermentation process – as long as it is used in the optimal amount.

The conclusion is simple: used in moderation, coconut oil can transform classic bread into a superior, tastier, healthier, and more visually appealing product. It can be an inspired choice for bakers who want to innovate while maintaining the accents of traditional baking.
