The Viennoiserie Workshop held by Cyril Hervé in Brașov – a demonstration of excellence and innovation in pastry

• Brașov, March 19, 2025 – Pastry enthusiasts had the opportunity to discover the latest viennoiserie techniques during an exceptional workshop held by Cyril Hervé, Puratos International Technical Advisor, at the Nova Pan headquarters in Brașov, Str. Poienelor no. 2A, in Baking Show, the space equipped with all the necessary equipment in a bakery, pastry and confectionery laboratory.

The event was organized through a partnership between Puratos, a global leader in innovation for the bakery, pastry and chocolate industry, and Nova Pan, a company recognized for providing complete solutions for specialists in the field. The collaboration between the two companies ensured an optimal setting in which participants could learn and experiment with new techniques to improve their products and production processes.

During the session, Cyril Hervé, assisted by pastry chefs Sebastian Dale and Laurențiu Holțman, demonstrated step by step the essential processes in making viennoiserie products, offering a detailed perspective on each stage: from the selection of ingredients, laminating techniques, to the perfect baking. Participants had the opportunity to familiarize themselves with the technique of master Hervé, one of the most appreciated international specialists in the field, and to discover innovative ways of reinterpreting classic products. Among the dishes presented were croissants, Danishes, New York Rolls, Flan Parisien and Pain Suisse, each of them having a refined appearance and a perfect taste.
