Why is pasta special?

The flour must be white, without brown bran or black dots, due to insufficient mechanical cleaning of the wheat, with homogeneous granularity and the ability to absorb liquids (water, eggs) from the production process. In addition, the flour must make the dough elastic – to obtain different types of pasta – and waterproof, so that it does not soften due to the water contained in the filling. Moreover, the flour must ensure the quick and perfect preparation of the product.
