First, the mint jelly is added to the glasses, over which the milk is poured, and the product is left at an optimal temperature between 43-45 to form the specific consistency of yogurt. Finally, the yogurt is cooled and kept cold to preserve its freshness.

In order for the mint jelly yogurt to be safe for consumption and to meet quality standards, several important analyses were performed, both from a physico-chemical and microbiological point of view. The following were verified:
- acidity and pH, to confirm that fermentation has proceeded correctly and the product is stable;
- fat, protein and dry matter content, which indicates the nutritional value of yogurt;
- storage temperature, essential for maintaining quality;
- the presence of yeasts, molds and unwanted bacteria, to guarantee food safety.
