• "Plăcintele poale-n brâu are traditional Romanian pies from the Moldovan area, which can be made with both sweet and salty cheese." Pastry Chef Mirela Cață presents the recipe proposed as part of our collaboration.

"Poale-n-brâu" pies
Component:
• Sweet yeast dough;
• Sweet cheese filling.
1. Dough
Ingredients:
• Flour 1200 g;
• Yeast 80 g;
• Sugar 250 g;
• Eggs 150 g;
• Milk 500 g;
• Salt 12 g;
• Vanilla pods / Vanilla paste 5 g;
• Lemon zest 20 g;
• Butter 100 g;
• Oil (for modeling) 100 g.

Knead a dough from all the ingredients, except the butter, which is added at the end of the mixing. It is ready when it comes away from the sides of the mixer bowl, has the right consistency, a smooth surface and a temperature of 28 ⁰C. Leave to rest for 10-15 minutes and divide into 70 g pieces, which are rounded and left to rest again.
2. Cheese filling
Ingredients:
• Bellows cheese 1000 g;
• Eggs 200 g.
Mix all the ingredients and blend.
Polishing
Ingredients:
• Eggs 100 g.
Using a whisk or fork, mix the eggs, then brush them onto the surface of the pies before baking.

Modeling and baking
Roll each piece out into a square shape using a rolling pin. Add the filling and fold the opposite corners together to form an envelope.
It is left to leaven about an hour. The ideal temperature for proofing is 30 -37 ⁰C, at a humidity of 60-70%. Brush with egg and bake at 170 - 180⁰C, for 15-20 minutes.
