IBIE 2025: a large-scale edition, with impressive figures

• Las Vegas hosted this year's edition of the 2025 World Series between September 13 and 17. International Baking Industry Exposition (IBIE), the largest and most comprehensive event dedicated to the baking industry in the Western Hemisphere.

The 2025 edition of IBIE attracted over 1.000 exhibiting companies from around the world, who presented the latest innovations in technology, ingredients, equipment and packaging solutions. The exhibition area reached a historic record of 451.100 de metri pătrați, 9% higher than the previous edition, marking the largest expansion in the event's 105 years of existence. Of the 1.005 exhibitors, 486 were present for the first time, demonstrating the growing appeal of IBIE globally.

Also, the educational program was the most extensive so far, with over 250 IBIEducate sessions and demonstrations, offered free of charge to all attendees. Topics ranged from artificial intelligence and automation to innovations in bakery formulation. The event attracted significant participation from Generation Z (+8%) and millennials (+43%), reinforcing IBIE’s role as a key resource for workforce training and bridging the skills gap in the industry.

Although the total number of participants decreased by 4% compared to the previous edition, IBIE 2025 brought together representatives from 96 countries, including 27 official delegations. Approximately 28% of buyers were from outside the United States, with the majority coming from countries in the Americas, such as Mexico, Canada, Brazil, Guatemala, Colombia, and Peru.

Competitions that celebrated excellence

IBIE 2025 hosted several prestigious competitions, showcasing the talent and creativity of professionals in the field. The international competitions included categories such as bakery, viennoiserie and artistic exhibits made from bread dough, with teams from Brazil, Canada, Ecuador, Mexico and the United States. Only two teams advanced to the world finals in Paris: Team Canada (1st place) and Team USA (2nd place).

World Bread Awards, nicknamed "The Oscars of Bread", returned to IBIE with 12 categories, from sourdough bread to bagel-s. A specialized jury evaluated the products live, awarding prizes to the most outstanding creations. The absolute winner was Guy Frenkel from Céor Bakery.

For the first time, IBIE hosted Panettone World Cup – Americas, a competition that celebrated the art and tradition of panettone. The winners, including Martinez Jaime (US), Emmidio Isernia (Canada), Flores Torres Wilson (Ecuador) and Vielma Ammary Coromoto (USA), qualified for the global finals in Milan, Italy.

Also, Pillsbury Creative Cake Decorating Competition, now in its 20th year, brought top cake decorating talent to the fore, with six teams competing in categories such as wedding cake, fondant, sculpted cake and buttercream. The competition was a true celebration of creativity and craftsmanship.

IBIE reaffirms its role as a reference point for the global bakery industry, inviting professionals in the field to mark their calendars for the next edition, scheduled for September 10-13, 2028, also in Las Vegas.
