• On June 10, 2025, at 18:00 PM, in the Council Room of the Municipal Palace in Prato, the launch of the book "Il Pane di Prato" by Francesco Bernocchi will take place.
Event will bring together important personalities, including Francesco Bernocchi, the author of the work, Enrico Fogacci, on behalf of local bakeries, Mayor Ilaria Bugetti, as representative of the Prato authorities, the dialogue with the author being facilitated by Annalisa Marchi, historical researcher.
The volume launch is organized with the support of Slow Food PratoThrough its official launch in Prato, the initiators aim to bring back to the forefront an essential element of Tuscan culinary heritage, in an exceptional work that combines historical rigor with a passion for traditional cuisine.
book "The Bread of Prato" by Francesco Bernocchi, explores the history and traditions related to the bread from Prato, a central element of local identity. The work includes several chapters that detail the path of bread in the life of the city: from the field cultivated with wheat and rye, to the stones of old mills, to the ovens in bakeries and the tables of families from all eras. Bread thus appears not only as food, but as a symbol of balance, work and resistance in the face of hardship. Old documents, testimonies collected from archives, expressions from the local dialect intertwine in a coherent, warm and relevant story.

"Il Pane di Prato" is a tribute to tradition and passion for this famous bread, considered "the best bread in Tuscany" offering a detailed look at its history and its role in the local community. The volume also includes ten original recipes that capitalize on Pane di Prato in modern combinations, without losing touch with its roots. These gastronomic proposals are not just a complement to the book, but a sincere invitation to rediscover bread as a living ingredient and to understand that in a piece of bread lies, sometimes, the entire story of a city.
Author
Francesco Bernocchi, the author of the volume, is a passionate lover of cultural heritage, born in Florence in 1967 and raised in Prato, where he attended high school, later graduating from the Faculty of Economics at the University of Florence. Over time, he has built a reputation as a passionate collector and historian, a careful researcher of local traditions. He has organized conferences and written various works, including "Preludio d'oro. De bono et puro auro" (2013) "Coin and Devotion" (2013) and "The Mortadella of Prato" (2024)
