Special attention in equipment development

Tekno Stamap produces almost all the components of its machines, which makes the company de facto autonomous: design, development and assembly take place within the company, which presents enormous advantages and, last but not least, an extremely good price/quality ratio competitive.

Tekno Stamap has always paid great attention to the ergonomics and design of its machines, constantly renewing the structures and control elements to meet the needs of confectioners and bakers around the world. In 2019, Tekno Stamap started the construction of a new production facility in GRISIGNANO DI ZOCCO, completed in 2022, moving from the approximately 4.500 m² of the old site to the current 9.000 m². This investment aims to have a single production center, complete with a 400 m² demonstration room, available for customers interested in trying live any machine.

Planetary mixers

Tekno Stamap planetary mixers have long been in the category of equipment preferred by professionals, being indispensable in kitchens and pastry and confectionery laboratories around the world. These mixers are designed for mixing large quantities of raw materials, being adapted to work with dough of any consistency, soft compositions for desserts, creams from various dairy products, mayonnaise, egg white foam, sauces.

The Italian company creates planetary mixers for small, medium or large scale production, all equipment being characterized by great robustness and reliability, as well as low maintenance.

The mixers of the C-Line 2 series, intended for small-scale production, are equipped with multiple and easily replaceable accessories, being ideal for mixing compositions for fillings, such as mousses or creams. The structure of the equipment is made of stainless steel and plexiglass, with a shock-resistant thermoformed ABS plastic cover. Special attention has also been paid to safety standards, in accordance with European Community regulations.

For medium and large production capacities Tekno Stamap created the TEKNO planetary mixers. They can be used in both pastry and confectionery laboratories for more delicate mixing operations at low operating costs. Mixers from the TEKNO range allow precise management of work schedules, thanks to electronic time and speed settings, which can be changed even during operation.

The puff pastry machines

Another example of successful Tekno Stamap equipment is represented by automatic and semi-automatic puff pastry machines, easy to use and adapted for medium and industrial production capacities.

The AUTOSMART automatic range, with a robust stainless steel and aluminum frame and structure, is the top line of Tekno Stamap laminating equipment. The easy-to-use touchscreen control panel with intelligent software makes programming really easy.

It is possible to set 50 work programs and link several lamination cycles in a sequence. Sequential programming provides the ability to set starts, stops, increasing and decreasing the distance between the rollers to meet specific needs without manual operation.

Equipped with an automatic flouring device and a dough rolling cylinder with system "no stress" increases efficiency, further reducing work time.

The AUTOSMART 123 range, equipped with cylinders with a diameter of 123 mm, allows the processing of dense doughs into extremely thin sheets, and in the version with a working width of 700 mm, they are ideal equipment for processing large quantities of dough.

Thanks to the possibility of customizing each machine, it will be possible to obtain croissants from 12 grams to 150 grams, depending on the requirements, reaching a production of up to 7000 pieces per hour. And through the calibration unit, a uniform dough is obtained at the desired thickness, eliminating possible losses.

CROYMAT equipment can also be customized by adding an electric pump and guillotine, cutting rollers and dough rollers, in addition to a wide range of other accessories.

CROYMAT industrial lines for croissants are also equipped with a lamination unit: adjusting the calibration cylinders allows changing the number of dough laminations. The lamination consistency is adjusted by closing or opening the belts to obtain any type of laminated product. Thanks to the easily removable lamination strips, cleaning can be done quickly.

The cutting system cuts the dough in two stages, avoiding it sticking to the knife blade, and the cutting rollers can be replaced, if necessary, in a few seconds. The dough recovery mechanism transports excess dough to a tray located below the cutter, which minimizes wastage and makes dough recovery simple and quick.

With the bypass table, CROYMAT becomes a real bakery line. The different cutting rollers offer the possibility to obtain several types of croissants, but also other types of products.
