• The SIGEP exhibition was also this year an excellent opportunity for specialists and businessmen to discover new technological concepts and solutions. On the one hand, the exhibitors presented the latest achievements from the entire reference area: raw materials and ingredients, machines, installations and technologies, packaging, space arrangements and product design, work tools and services. On the other hand, SIGEP 2018 offered a generous calendar of competitions and demonstrations by renowned international masters, all superlative.
MILLENNIAL ovens from TECNOEKA – Airflowlogic, Humilogic and Drylogic
TECHNOEKA, manufacturer of ovens for pastry, confectionery and gastronomy, presented the new generation of ovens, the MILLENNIAL Range.
Millennial is a line of electric convection ovens with a steam system that combines aesthetics and functionality, with a minimalist and elegant design.
Airflowlogic, Humilogic and Drylogic are the three new patented technologies of Millennial ovens, which ensure full control in humidity management and perfect baking.
Millennial also stands out for its integrated washing system, with a 30% savings in
water consumption. Another quality of these ovens is the ability to be connected to the Wi-Fi network for loading and managing a recipe book that can cover up to 500 programmable recipes.
And, watch out! Millennial "speaks" more than 40 languages, a clear sign of attention to detail.
The company also organized a cooking show in the stand, where the ovens put to work demonstrated their qualities.
DE DANIELI proposes a new boiling machine with bain-marie system, at an attractive price
Italian manufacturer BY DANIELS exhibited a new bain-marie boiling machine with a capacity of 15 liters, the only one missing from the range.
The advantage of this car is primarily the price, which does not exceed 5.000 euros. The equipment stands out for its flexibility, when preparing smaller quantities, but also for the fact that it can make a varied range of products, from pastry creams - confectionery, to jams and jellies, sauces, even vegetable preparations or other products which requires boiling. Simple to use, with a very low energy consumption, the machine is useful in any pastry, confectionery, gelateria or gastronomy laboratory.
GEMM in the European top 10
Company Gemma, manufacturer of equipment for cooling and freezing food products, presented a technology in step with innovations in the field.
Because the impact on the environment is also an important aspect, we cannot overlook the efforts of the refrigeration equipment manufacturer GEMM, which, in the new models, succeeded in replacing R 404 gas with R452A.
This results in reducing ozone depletion potential to almost zero.
In recognition of its efforts for innovation and the reduction of greenhouse gas emissions, GEMM has been included, with its new range of XT equipment, in the European top 10 by the well-known evaluator www.topten.eu.
Innovation in OVO-TECH technology
Polish manufacturer OVO-TECH remains focused on equipment and technologies
to break and separate eggs.
At SIGEP 2018, OVO-TECH attracted attention with a technological innovation.
An equipment to break eggs and separate the white from the yolk, which does not require washing and disinfecting the eggs beforehand, because the outside of the shell does not come into direct contact with the contents.
The processing capacity of the equipment is 1.600 eggs per hour.
CYBERPAN-COLBAKE
Even though this year, the AB Tech section, dedicated to baking and which is organized only every three years, was not held at SIGEP, the Spanish manufacturer of machines for dividing and shaping the dough, CIBERPAN, was present.
Along with the news brought to the public, the company also announced its rebranding action.
Thus, the name CIBERPAN, with which it has been present on the Romanian market for more than 10 years, will, from now on, be COLBAKE.
DSC - "From the cocoa bean to the chocolate bar"
DSC, another Italian manufacturer that I noticed, presented a new concept of an integrated line for the production, processing and packaging of chocolate, based on the principle "from the cocoa bean to the chocolate tablet".
It's a different way of approaching the production of quality chocolate, which can be customized, an advantage to consider now, when artisan productions and organic products are in high demand.
MINIPAN continues the race with large industrial lines
MINIPAN, the Italian company with important lines also installed in Romania, was present this year, with machines and automated solutions for the processing of soft doughs. Also worth noting were the demonstrations in the stand with SYR ROTO, the well-known car
for gluten-free products.
The manufacturer, based near the Imola circuit, is in a constant race, in recent years concerned with developing high-capacity industrial lines for the production of breadsticks, bagels, crackers and special bakery products.
Right now, in the Minipan production halls, two lines are being tested that will be installed for the Brazilian Bimbo Group, the world's largest producer of bakery products.
STAINLESS STEEL PULLEY develops the modular concept
PIGLIA INOX comes every year to the Rimini Show with new products that mirror
the financial power, innovation and production capacity of the company. Factory of
over 12.000 square meters owned by Mr. Giovanni Montanaro produces absolutely everything, more
less refrigeration units and accessories. There is a control of all operations by
production, and this shows in the final product line.
We also admired in the SIGEP 2018 stand showcases and exhibition shelves, work tables, various stainless steel bodies, as well as the new line for gastronomy, SMALL GASTRO & FOOD, which allows the creation of modular work surfaces.
The manufacturer knew how to turn even a disadvantage into a strength.
Located in southern Italy, the factory had to bear the transport costs of the finished products. It was precisely this shortcoming that led to the development of the concept of modular products.
CIAM innovative exposure solutions
The stand of the window manufacturer CIAM offered by far the most innovative product display solutions.
We admired the design of the confectionery - gelateria showcases made in collaboration with famous architects from Italy.
The manufacturer presented for the first time the "ICEDESIGN" concept, which practically reinvents the rules of product display. Made of an innovative white Pure Acrylic Stone material, the showcase becomes an immaculate, modular display area that allows the combined display of ice cream tubs, buried tanks, ice cream on a stick or other types of gelato products.
CIAM also presented the "GELATOLIVE" concept, an exercise in style, by integrating an element of traditional ice cream production, the vertical cooling mixer, from Cattabriga, into the canning bench. The novelty also consists in bringing the lids of the cylindrical ice cream storage tanks to the same level as the work surface of the bench.
