In bakery, pastry and confectionery, the sugar it is very important because it provides the sweet taste so loved by consumers. But sugar does not only mean taste, it also has an impact on other parameters, such as the texture, volume or color of the product.
Products with reduced sugar content represent a current trend, which can no longer be ignored. More and more consumers are looking for such products, and manufacturers will have to find solutions to meet this demand and challenge at the same time.
German company research Symrise, a leader in the production of flavors and flavoring bases, have demonstrated that low-sugar bakery products are sought after by consumers. 75% of participants in study they stated that they would choose a product with less sugar. Most of these respondents said they prefer low-sugar products that taste the same as normal-sugar products.
Based on the research results, the company identified three ways to reduce sugar, starting from consumer preferences:
• perfect substitute (for consumers who want reduced sugar content & the same sweet taste)
• product subcategory (for consumers who want reduced sugar content & similar & less sweet taste)
• creating a new product (for consumers who want reduced sugar content & new & less sweet taste)

Symlife Sweet Optimizer Baking MFC solution – taste modulator
The German company Symrise has introduced a taste modulator to the market, called Symlife Sweet Optimizer Baking MFC (Multi-Functional Compound). This multifunctional compound allows the reduction of sugar in pastry products by up to 50%, while preserving the taste, texture and properties of the product. Thus, the consumer enjoys a healthy and tasty product. The taste modulator has been tested and had very good results in the preparation of biscuits, sponge cakes and cookies.
Benefits of using Symlife Sweet Optimizer Baking MFC
• Rebalances the formula of low-sugar products in terms of sweetness, fullness of taste and flavor profile;
• Replaces up to 50% of the amount of sugar, in a 1:1 ratio, thus being easily used in recipes;
