• In consumer trends observed globally over four years, from 2019-2022, consumers show five key preferences. In reverse order, they are: caramel, vanilla, nuts, chocolate and fruit. same source, Innova Insights, put fruits at the top of the list with a percentage of 30.8%.
For Romania, the study Press Tomorrow, faithfully contextualizes the global preferences of local consumers. We thus find that, a percentage of 80% of survey respondents like to find an element of familiarity when trying new types of food. In recent years, Puratos Romania's research and development team could not help but notice more and more bakeries and confectioneries that want to experiment, reinvent and accept the challenge of launching new finished products on the market. How can we minimize the risk of losing that element of familiarity so desired by the public and retain the versatility and baking performance that a professional bakery and confectionery ingredient must have?
All Romanian consumers, this time in a proportion of 79%, believes that food produced with local ingredients is healthier. Exposed in the last decade to an explosion of information related to type programs "from farm to table", "from field to fork", in their perception the association of "healthier" with "local ingredients" was quite strong.
Romanians go even further with their preferences, so that 72% of respondents believe that food produced with local ingredients has a positive impact on the environment. The rules of taste for bakery and confectionery products are clear: be fruity, present familiarity, have local ingredients and contribute to positive environmental impact.

The Puratos R&D team proposes six innovative solutions, from the Topfil and Vivafil ranges, which tick all the criteria: Topfil Apple 80%, Topfil Apple 80% Pieces, Topfil Sour Cherry 40%, Topfil Sour Cherry 65%, Topfil Plum Smooth 90%, Vivafil Apple 35%. All are produced in the Puratos factory, in Tunari, where over tens of tons of fruit fillings and functional creams for pastry-confectionery applications are produced weekly.
The involvement of Romanian farmers contributes to the feeling of local belonging to the taste
From over 20 years of innovation in bakery, pastry, confectionery and chocolate on the Romanian market, the Puratos R&D team has acquired a maturity in understanding what are the challenges of managing a confectionery-pastry laboratory and why versatility is the element key for any product, in which professionals working in such laboratories put all their trust when choosing it. The Topfil and Vivafil fruit filling ranges, in addition to versatility, have an extraordinary stability when baking, tested by Puratos specialists over the last 12 months. In all the tests it was observed that the filling remains in the product as you put it. It doesn't disappear. It does not run and the taste of fresh fruit is preserved. At the same time, they are easy to integrate into a multitude of recipes.

From now on, bakers and confectioners who want to play by the rules of taste expressed by Romanian consumers can keep that element of familiarity when choosing the Topfil and Vivafil product range. The apple fillings contain the most beloved apples, those from Voinești, and Pinova apples, from the Cluj region. Any finished product will be able to reactivate the memories that originate in childhood with summers spent among the orchards. Using the fillings in viennoiserie and pastry recipes, of an above-average finesse, sustainably supports the businesses of local farmers. And I give confidence that Romanian apples have rediscovered their potential to impress through taste.
