Sumac flour gives new qualities to bread

A team of Polish researchers tested the effect of adding sumac flour on the organoleptic and nutritional properties of bread.

Dosage study

Researchers looked at supplementing wheat flour in recipes with various amounts of sumac flour. They used in recipes between 1 and 5 g of sumac powder, per 100 g of wheat flour. Each of these 5 recipes (the first with 1 g of sumac per 100 g of wheat flour and the last with 5 g of sumac per 100 grams of wheat flour) were tested in two variants. With a normal amount of salt (1,5 g/100 g) and a significantly reduced amount (0,5 g/100 g).

Sumac makes bread without salt taste better

The obtained results showed that the incorporation of sumac flour causes a decrease in the volume of the bread and an increase in the hardness of the bread core, especially when the amount exceeds 2 g per 100 g. The addition of sumac flour enriched the wheat bread with phenolic compounds. Thus, the total phenolic content increased from 5,4 to 15,2 mg of gallic acid equivalent per 100 g of dry weight. In turn, this led to an increase in antioxidant capacity. The conclusion of the study shows that the optimal addition level of sumac flour is a maximum of 3 g per 100 g. For this dosage, the quality of the bread is kept at an acceptable level, and the functional benefits.
