Everzure Galdieria: the natural blue dye from microalgae, close to approval in the EU

• Swiss group Givaudan, a producer of ingredients and flavors, is on the verge of an important milestone for one of the most innovative natural dyes in its portfolio.

Everzure Galdieria, a blue dye derived from microalgae Galdieria sulfuraria, has received a positive opinion from the European Food Safety Authority (EFSA). This favourable assessment paves the way for final authorisation by the European Commission, allowing its widespread use in the food and drink industry in the European Union.

The colorant is a natural and acid-stable alternative to Brilliant Blue FCF (E133), the traditional synthetic colorant. Unlike spirulina, which has limitations in acidic applications, Everzure Galdieria offers vibrant shades of blue, green and purple, significantly expanding the formulation possibilities for manufacturers. Developed in collaboration with a French biotechnology company, the product is obtained through controlled fermentation of microalgae, followed by a gentle extraction in water, a process that ensures full traceability, consistent quality and sustainable production with efficient resources.

Thanks to its superior stability under acidic conditions, Everzure Galdieria is excellently suited for a wide range of applications: soft drinks, juices, sports drinks, confectionery products such as jellies and hard candies, dairy and frozen desserts (yogurts, ice cream), as well as fruit preparations, fillings and pastry decorations. These characteristics directly respond to the growing demand for natural, clean and easily recognizable ingredients on the label.

Consumer preferences – traction for innovation

Market research shows that approximately 30% of global consumers are reducing their consumption of processed foods and 27% are avoiding ingredients perceived as harmful, including artificial additives. In this context, the transition to natural colors is becoming a strategic priority for brands, driven by both consumer preferences and regulatory pressures.

Everzure Galdieria was already approved by the FDA in the United States last year. In Europe, the regulatory process follows a cautious approach, with rigorous evaluations and periodic re-evaluations of additives. EFSA's positive opinion after a detailed review confirms the safety of the colorant and marks significant progress towards its full authorization as a food additive.

Beyond the technical aspects, color plays a key strategic role in the modern food industry. In the age of social media, where platforms like Instagram and TikTok are rapidly amplifying the notoriety of visually appealing products, vibrant hues play a decisive role in attracting consumer attention and differentiating brands. Blue, in particular, conveys sensations of novelty and adventure, and its association with a natural ingredient reinforces the perception of freshness and authentic quality.

Through this dye, Givaudan offers manufacturers the opportunity to create innovative products that combine the aesthetic performance of intense shades with the benefits of sustainability and the use of clean natural ingredients. Once definitively approved, Everzure Galdieria promises to open up new opportunities for the development of attractive, stable foods and beverages aligned with the current requirements of the European market.

The presentation of innovations in colors and flavors took place recently at Expo West 2026 in Anaheim, United States, confirming Givaudan's pioneering position in developing solutions that meet both consumer demands and current legislative challenges, and underlines the company's commitment to supporting the industry's transition towards natural, safe and high-performance solutions.

Final approval in the EU would represent a major step for both Givaudan and the entire food sector, providing consumers with cleaner and more visually appealing options.
