• “These discs can be made with Chocolate white, milk chocolate, dark chocolate, but even ruby chocolate.” tells us chocolatier Alina Lungu. Ingredients:
Chocolate Callebaut 823 with milk – 300 g.
Cashews – 30 g.
Candied kiwi – 30 g.
Dried apricots – 30 g.
Hazelnuts – 30 g.
Goji berries – 30 g.
Pistachio – 30 g.
Freeze-dried raspberries – 20 g.

Working method:
Slice the kiwi and apricots into thin 2 cm x 0.5 cm slices.
Se tempers milk chocolate and pour it into the mold preheated with the hot air gun. Vibrate to remove air bubbles from the inside, clean with knife the excess chocolate and then decorate with the fruit. Put them on fridge (at 10-12 degrees Celsius / humidity max 60%) until the discs come off matrix.
